Fissler presents the 2013 knife sensation at the Ambiente:
The innovative knife that remains sharp

The best ideas often come from Mother Nature. This is why the science of bionics combines the disciplines of biology and technology not only in name, but in reality. The idea is to transfer phenomena from nature to technologies and products. One familiar example is the hook-and-loop fastener. Inventor Georges de Mestral adapted its elastic hooks and loops, that attach to their counterparts, from the fruits of the burdock. Premium cookware manufacturer Fissler has now attained a top position in knife expertise thanks to a true sensation, one that also originated in nature: Developed according to the principle of beaver teeth, the new Fissler bionic knives stay sharp forever without resharpening.

The beaver is known for his strong teeth, so strong that he can even fell trees with them. He is lucky that they never become dull, even if they are subjected to a great deal of wear and tear. But why is that? It's very simple: Beaver teeth consist of two different materials – the softer dentin and a layer of extremely hard enamel. These two materials wear at different rates, so that a sharp biting edge always remains. Fissler has transferred this principle to its new Fissler bionic knives with the help of a patented technology, even perfecting the technique.

Maximum hardness. Minimum wear.
Like all Fissler knives, the "new ones" have a forged blade made of high-quality chromium molybdenum vanadium steel. On one side, however, they also have an additional specially developed, ultra-hard coating. It consists of a special ingredient that is practically as hard as the hardest material in the world: diamond. When the knife is used, the stainless steel of the blade and the coating behave in a way that is similar to the dentin and enamel of the beaver teeth. The result: a knife blade that not only is sharp, but remains sharp. And without resharpening.

The new Fissler bionic knife guarantees easy work for the cook at any time – for a perfectly sharp knife is always at hand. So good ingredients – from meat or fish to vegetables – can be prepared perfectly, quickly, and without time-consuming sharpening. Fissler is distributing a limited edition of the bionic knife to stores, in two models: as a large chef’s knife and as a Santoku knife, the Asian "Knife of the Three Virtues." The Fissler bionic knives are made by hand in the knife center of excellence in Solingen, Germany. Of course, they also have the highest possible corrosion protection – with the Fissler e-protect special polishing – for cutting fun for the life of your kitchen.

The new Fissler bionic knives will be available in selected retail stores as of June 2013.
